Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs, sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar or honey
  • 1 lime lime juice and zest
  • 2 tablespoons pineapple juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 to taste salt and pepper

Method
 

  1. Whisk soy sauce, brown sugar, lime juice, pineapple juice, garlic, and ginger together.
  2. Season chicken lightly with salt and pepper.
  3. Cook chicken in a hot skillet until nearly cooked through.
  4. Pour sauce into the skillet and simmer until chicken is cooked and sauce thickens.
  5. Remove from heat and serve with rice and pineapple.
