Ingredients
  

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1 tbsp maple syrup or honey
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/3 cup toasted walnuts, chopped
  • 2 tbsp honey
  • 1 tsp apple cider vinegar
  • fresh thyme (optional)
  • 8–10 wooden skewers, soaked

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss Brussels sprouts with olive oil, maple syrup or honey, salt, and pepper.
  3. Arrange cut-side down and roast for 25–30 minutes, flipping halfway.
  4. Toast walnuts in a dry skillet for 2–3 minutes until fragrant.
  5. Warm honey and apple cider vinegar, then stir in toasted walnuts.
  6. Thread roasted sprouts onto skewers, spacing evenly.
  7. Drizzle warm honey walnut glaze over skewers and garnish with thyme.
