Ingredients
  

  • 3 large ripe heirloom tomatoes, diced
  • 1 cup fresh basil leaves, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • salt and black pepper to taste
  • 1 French baguette, sliced
  • 2 tbsp olive oil for brushing bread
  • 1 clove garlic, halved (optional)
  • 8 oz burrata cheese, torn

Method
 

  1. Combine diced tomatoes, basil, olive oil, balsamic vinegar, salt, and pepper in a bowl. Toss gently and rest for 10 minutes.
  2. Brush bread slices with olive oil and toast until golden and crisp. Rub with garlic if desired.
  3. Spoon tomato mixture onto toasted bread, then top with torn burrata pieces.
  4. Finish with cracked black pepper and serve immediately.
