Ingredients
  

  • 2 cups grated zucchini (or mixed vegetables)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp oil for frying

Method
 

  1. Grate the vegetables and squeeze out excess moisture using a clean towel.
  2. In a bowl, combine vegetables, eggs, flour, cheese, salt, and pepper. Mix gently until combined.
  3. Heat oil in a skillet over medium heat.
  4. Spoon mixture into the skillet, flatten slightly, and cook until golden on both sides.
  5. Remove from skillet and serve warm.
