Ingredients
  

  • 1 lb ground turkey (93% lean or higher)
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup low-sodium chicken or vegetable broth
  • 1 tbsp olive oil
  • 14 oz diced tomatoes or tomato sauce (optional)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it apart. Remove and set aside.
  2. In the same skillet, add onion and bell pepper. Cook until softened, then add garlic and stir until fragrant.
  3. Add sweet potatoes, paprika, thyme, cumin, chili powder if using, salt, and pepper. Stir to coat.
  4. Pour in broth and optional tomatoes. Cover and simmer until sweet potatoes are tender, about 12–15 minutes.
  5. Return turkey to skillet and cook uncovered for 3–5 minutes until heated through and liquid reduces slightly.
