- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it apart. Remove and set aside.
- In the same skillet, add onion and bell pepper. Cook until softened, then add garlic and stir until fragrant.
- Add sweet potatoes, paprika, thyme, cumin, chili powder if using, salt, and pepper. Stir to coat.
- Pour in broth and optional tomatoes. Cover and simmer until sweet potatoes are tender, about 12–15 minutes.
- Return turkey to skillet and cook uncovered for 3–5 minutes until heated through and liquid reduces slightly.
