- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas in a large bowl until smooth.
- Stir in the granulated sugar, brown sugar, egg, and vanilla until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Add dry ingredients to the wet mixture and stir just until combined.
- Fold in optional add-ins if using.
- Scoop dough onto the baking sheet and flatten slightly.
- Bake for 10–12 minutes until edges are set. Cool before serving.
