Ingredients
  

  • 1 cup rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups mashed ripe bananas
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a muffin tin.
  2. Whisk oats, flour, baking soda, salt, and sugar in a bowl.
  3. Mix eggs, applesauce, oil, vanilla, and mashed bananas until smooth.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Gently fold in blueberries.
  6. Divide batter evenly among muffin cups.
  7. Bake for 18–22 minutes until set and lightly golden.

Notes

Use very ripe bananas for best flavor and lightly coat blueberries in flour to prevent sinking.
