Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled and diced

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. Whisk flour, baking soda, salt, sugar, cinnamon, and nutmeg in a bowl.
  3. Mix eggs, applesauce, oil, and vanilla until smooth.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Gently fold in diced apples.
  6. Pour batter into pan and sprinkle with coarse sugar if desired.
  7. Bake for 50–55 minutes until a toothpick comes out with a few moist crumbs.
  8. Cool before slicing and serving.
