Ingredients
  

  • 2-3 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt (optional)
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • salt and pepper to taste
  • fresh parsley or dill, chopped

Method
 

  1. Place cooked chicken in a large mixing bowl.
  2. Add mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Stir gently to coat.
  3. Fold in celery, onion, and any optional add-ins.
  4. Season with salt and pepper and mix gently.
  5. Chill for 30 minutes before serving if desired.
