Ingredients
  

  • 6-8 Russet potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise (full-fat)
  • 8 slices bacon, cooked and crumbled
  • 3 cloves garlic, minced
  • 1 medium onion, chopped

Method
 

  1. Preheat oven to 325°F (163°C) and grease a 9×13-inch baking pan.
  2. Add potatoes, cheese, bacon, garlic, and onion to the pan and combine.
  3. Add mayonnaise and mix until all ingredients are fully coated.
  4. Bake uncovered for 1.5 hours, until potatoes are tender and top is golden and bubbly.
  5. Let rest 5–10 minutes before serving.
