Ingredients
  

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk or buttermilk

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in lemon zest and juice.
  4. Whisk flour, baking powder, and salt. Add to batter alternating with milk.
  5. Scoop dough onto baking sheet and bake 12–15 minutes until edges are set.
  6. Cool completely and glaze if desired.
