Ingredients
  

  • 2 boneless skinless chicken breasts, sliced
  • 1 tablespoon olive oil
  • 1 cup uncooked orzo pasta
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet and cook seasoned chicken until golden. Remove and set aside.
  2. Add garlic to the skillet, then stir in orzo and chicken broth.
  3. Simmer until orzo is tender and liquid is mostly absorbed.
  4. Stir in cream, cooked chicken, oregano, and Parmesan.
  5. Cook briefly until creamy and serve with extra Parmesan.
