- Slice zucchini evenly, lightly salt, let rest 10 minutes, then pat dry.
- Mix flour with paprika, garlic powder, oregano, salt, and pepper in one bowl. Place beaten egg in a second bowl and breadcrumbs with Parmesan in a third.
- Dip zucchini into flour mixture, then egg, then breadcrumbs, pressing gently to coat.
- Arrange on a lined baking sheet, lightly spray or drizzle with olive oil.
- Bake at 400°F (200°C) for 20–25 minutes, flipping halfway, until golden and crispy.
