Ingredients
  

  • 2 medium zucchini, sliced into rounds or sticks
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 large egg, beaten
  • 3/4 cup breadcrumbs or panko
  • 2 tablespoons grated Parmesan cheese (optional)
  • 2 tablespoons olive oil or olive oil spray

Method
 

  1. Slice zucchini evenly, lightly salt, let rest 10 minutes, then pat dry.
  2. Mix flour with paprika, garlic powder, oregano, salt, and pepper in one bowl. Place beaten egg in a second bowl and breadcrumbs with Parmesan in a third.
  3. Dip zucchini into flour mixture, then egg, then breadcrumbs, pressing gently to coat.
  4. Arrange on a lined baking sheet, lightly spray or drizzle with olive oil.
  5. Bake at 400°F (200°C) for 20–25 minutes, flipping halfway, until golden and crispy.
