Ingredients
  

  • 6-8 slices bacon, chopped
  • 1 lb ground beef (80–85% lean)
  • 1 small onion, diced
  • 3-4 cloves garlic, minced
  • 1 tbsp burger seasoning
  • 2 tsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tbsp dill pickle relish
  • 1 tsp yellow or Dijon mustard
  • 8 oz canned tomato sauce
  • 1 cup uncooked long-grain white rice
  • 2 1/4 cups beef broth
  • 2 cups shredded sharp cheddar cheese

Method
 

  1. Cook chopped bacon in a large heavy pot over medium heat until crispy. Remove with a slotted spoon, leaving about 1 teaspoon of grease.
  2. Add ground beef, onion, and garlic. Cook 6–7 minutes until beef is browned and onions are soft. Drain excess fat.
  3. Stir in burger seasoning and Worcestershire. Cook 1–2 minutes.
  4. Add tomato paste, cook 2 minutes. Stir in dill relish, mustard, and tomato sauce.
  5. Stir in uncooked rice and pour in beef broth. Bring to a boil, reduce heat, cover, and simmer 18–20 minutes.
  6. Remove from heat. Stir in 1 cup cheese and the cooked bacon.
  7. Top with remaining cheese, cover, and let sit 5 minutes until melted.

Notes

Add jalapeños for heat, swap cheeses for variety, or top with lettuce, pickles, or tomatoes for a loaded cheeseburger twist.
