Ingredients
  

  • 4 large russet potatoes
  • 1 cup shredded raclette cheese or Gruyere
  • 1/2 cup cooked ham, diced
  • 1/4 cup cooked bacon, crumbled
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon Dijon mustard
  • black pepper to taste

Method
 

  1. Bake potatoes at 400°F until tender, about 50 to 60 minutes.
  2. Mix cheese, ham, bacon, sour cream, chives, mustard, and pepper in a bowl.
  3. Cut potatoes open and stuff generously with filling.
  4. Broil stuffed potatoes until cheese is melted and golden.
