- Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a large bowl, mix uncooked rice, cream of mushroom soup, chicken broth, milk, olive oil, and seasonings until combined.
- Stir in cooked chicken and half of the shredded cheese.
- Pour mixture into prepared baking dish and cover tightly with foil.
- Bake for 45 minutes, remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10–15 minutes until bubbly.

You can add peas, carrots, or broccoli for extra nutrition. Rotisserie chicken works well for convenience.
