- Preheat oven to 350°F and grease a baking dish.
- Whisk pancake batter ingredients until just combined.
- Cook sausage and onion until browned, then drain excess grease.
- Spread pancake batter in baking dish and top with sausage.
- Whisk custard ingredients and pour evenly over the dish.
- Bake 35–40 minutes until set and lightly golden.
- Rest 10 minutes before slicing and serving.
