Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 small onion, chopped (optional)
  • 4 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • salt, to taste
  • black pepper, to taste

Method
 

  1. Preheat oven to 350°F and grease a baking dish.
  2. Whisk pancake batter ingredients until just combined.
  3. Cook sausage and onion until browned, then drain excess grease.
  4. Spread pancake batter in baking dish and top with sausage.
  5. Whisk custard ingredients and pour evenly over the dish.
  6. Bake 35–40 minutes until set and lightly golden.
  7. Rest 10 minutes before slicing and serving.
