Ingredients
  

  • 2 medium potatoes, thinly sliced
  • 2 medium zucchinis, thinly sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • salt, to taste
  • black pepper, to taste

Method
 

  1. Wash and thinly slice potatoes and zucchinis evenly.
  2. Toss vegetables with olive oil in a mixing bowl.
  3. Heat oil in a skillet and sauté garlic until fragrant.
  4. Add vegetables, season with thyme, salt, and pepper, and cover to cook.
  5. Uncover and cook, stirring gently, until golden and tender.
  6. Finish with optional toppings and serve hot.
