Ingredients
  

  • 4 pieces boneless, skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • salt, to taste
  • black pepper, to taste
  • 2 cups corn kernels
  • 2 medium jalapeños, diced
  • 1 medium red bell pepper, diced
  • 1 small red onion, sliced
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 1 lime lime juice
  • 1 clove garlic, minced
  • 1 teaspoon honey (optional)

Method
 

  1. Whisk marinade ingredients and coat chicken. Marinate 30 minutes.
  2. Grill chicken over medium-high heat until cooked through. Rest briefly.
  3. Sauté corn, jalapeños, bell pepper, and onion until tender.
  4. Whisk creamy sauce ingredients until smooth.
  5. Assemble bowls with base, chicken, vegetables, and sauce.
