- Heat olive oil in a large skillet over medium heat. Sauté onions until soft and golden. Add garlic and ground beef and cook until browned. Drain excess grease if needed.
- Stir in French onion soup, beef consommé, Worcestershire sauce, and thyme. Bring to a simmer.
- Mix in egg noodles, cover, and cook 10–12 minutes, stirring occasionally, until noodles are tender.
- Remove from heat. Stir in sour cream and season with salt and pepper. Garnish with parsley before serving.
