Ingredients
  

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 medium cucumber, diced
  • 1 cup shredded carrots
  • 1/2 cup Kalamata olives, halved
  • 4 oz feta cheese, crumbled
  • 2 oz salami or pepperoni, chopped
  • 1 cup cooked chicken, optional

Method
 

  1. Wash and chop all vegetables into bite-sized pieces.
  2. Combine vegetables in a large bowl.
  3. Add cheese, meats, and chicken if using.
  4. Whisk dressing ingredients until emulsified.
  5. Toss salad with dressing and garnish with basil.
