Ingredients
  

  • 1 lb ground beef, turkey, or chicken
  • 1 cup long-grain white rice
  • 1 packet taco seasoning
  • 2 cups chicken or vegetable broth
  • 14.5 oz diced tomatoes, with juices
  • 1 cup shredded cheddar cheese (optional)

Method
 

  1. Brown ground meat in a large skillet until fully cooked. Drain excess grease.
  2. Stir in uncooked rice and taco seasoning until well coated.
  3. Add broth and diced tomatoes. Bring to a boil.
  4. Reduce heat, cover, and simmer until rice is tender and liquid absorbed.
  5. Top with cheese if using and cover until melted. Fluff and serve.
