Ingredients
  

  • 16 oz frozen peas, thawed
  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream or Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1-2 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Thaw peas and dice vegetables into small, even pieces.
  2. Whisk mayonnaise, sour cream, vinegar, sugar, salt, and pepper until smooth.
  3. Combine peas, vegetables, cheese, and bacon if using.
  4. Add dressing and toss gently to coat evenly.
