Ingredients
  

  • 1 lb ground beef or beef and pork mix
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 large egg
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme or Italian seasoning
  • salt and black pepper to taste
  • 2 cups mashed potatoes
  • 2 tbsp butter, softened
  • 1/4 cup heavy cream or milk

Method
 

  1. Preheat oven to 375°F and prepare muffin tin with liners or grease.
  2. Mix meatloaf ingredients gently until just combined.
  3. Divide mixture evenly into muffin cups.
  4. Bake until cooked through and lightly browned.
  5. Whip mashed potatoes with butter and cream until fluffy.
  6. Pipe or spoon potatoes onto meatloaf cupcakes and garnish as desired.
