Ingredients
  

  • 1 cup dried green or brown lentils (or 2 cups cooked)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1/2 cup rolled oats
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • salt and black pepper to taste
  • 2 tbsp olive oil for cooking

Method
 

  1. Cook lentils in water until tender, then drain and cool slightly.
  2. Combine lentils with vegetables, oats, herbs, and spices.
  3. Mash lightly and mix until mixture holds together.
  4. Shape into patties and chill briefly.
  5. Pan-fry patties in olive oil until golden on both sides.
