Ingredients
  

  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1/4 tsp ground cinnamon
  • 1 pinch salt
  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten
  • coarse sugar for sprinkling (optional)

Method
 

  1. Preheat oven to 400°F and line a baking sheet.
  2. Cook blueberries with sugar, cornstarch, lemon juice, cinnamon, and salt until thickened. Cool completely.
  3. Cut puff pastry into equal squares and add filling to centers.
  4. Fold and seal edges, then brush with egg wash and sprinkle with sugar.
  5. Bake until puffed and golden brown.
