Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded rotisserie chicken
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • 1 leaf bay leaf
  • salt and black pepper to taste

Equipment

  • large pot or Dutch oven
  • wooden spoon

Method
 

  1. Sauté onion and garlic in butter until softened.
  2. Add mushrooms and cook until golden.
  3. Add broth, carrots, celery, thyme, and bay leaf. Simmer until tender.
  4. Stir in chicken and cream. Heat gently and season.
