Ingredients
  

  • 2 medium zucchini, grated
  • 1 medium carrot, grated
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • salt and black pepper to taste
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese for topping

Method
 

  1. Preheat oven to 400°F and line a baking sheet.
  2. Squeeze excess moisture from grated zucchini and carrot.
  3. Mix vegetables with cheese, egg, and seasonings.
  4. Spread mixture evenly and bake until set and lightly golden.
  5. Add sauce, cheese, and toppings. Bake until melted.
