Ingredients
  

  • 3 medium zucchini, sliced into thick planks
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup grated Parmesan cheese

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Slice zucchini and pat dry to remove moisture.
  3. Toss zucchini with olive oil and seasonings.
  4. Roast until golden and tender, flipping once.
  5. Top with Parmesan and roast until melted.
