Ingredients
  

  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 1 cup buttermilk
  • 1 cup unsalted butter (for frosting)
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 0.25 cup heavy cream (for frosting)
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup heavy cream (for ganache)

Method
 

  1. Preheat oven to 350°F and prepare two 9-inch cake pans.
  2. Mix dry ingredients. Cream butter and sugar, add eggs, vanilla, bananas, and buttermilk, then combine with dry ingredients.
  3. Divide batter between pans and bake 25–30 minutes. Cool completely.
  4. Beat frosting ingredients until smooth and fluffy.
  5. Assemble cake with frosting between layers and on top.
  6. Heat cream and pour over chocolate chips to make ganache. Pour over cake.
