Ingredients
  

  • 1 lb beef sirloin or tenderloin, cubed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme
  • 4 medium potatoes, peeled and cubed
  • 0.5 cup heavy cream
  • 4 tbsp unsalted butter (for potatoes)

Method
 

  1. Boil potatoes in salted water until fork-tender. Drain and mash with cream and butter.
  2. Season beef with salt and pepper. Sear in hot skillet until browned.
  3. Lower heat, add butter, garlic, and thyme. Stir until fragrant.
  4. Return beef to skillet and toss in garlic butter sauce.
