Ingredients
  

  • 15 oz chickpeas, drained and rinsed
  • 0.5 cup dried cranberries
  • 0.5 cup walnuts, chopped
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup fresh orange juice
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Toast walnuts in a skillet until fragrant. Let cool.
  2. Combine chickpeas, cranberries, walnuts, onion, and parsley in a bowl.
  3. Whisk orange juice, olive oil, vinegar, honey, mustard, salt, and pepper.
  4. Pour vinaigrette over salad and toss gently to combine.
