Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 3/4 cups all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • additional powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. Cream butter, granulated sugar, and powdered sugar until fluffy.
  3. Mix in vanilla and almond extracts.
  4. Add flour, panko, and salt; mix to form a soft dough.
  5. Roll tablespoon-sized portions into smooth balls.
  6. Arrange on baking sheets and bake 12–14 minutes.
  7. Cool 5 minutes, then roll warm cookies in powdered sugar.
  8. Cool completely and dust again before serving.

Notes

Use unseasoned panko only. Roll cookies in powdered sugar while warm for best coating.
