Ingredients
  

  • 6–8 Russet potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 cup full-fat mayonnaise
  • 8 slices bacon, cooked and crumbled
  • 3 cloves garlic, minced
  • 1 medium onion, chopped

Method
 

  1. Preheat oven to 325°F (163°C) and lightly grease a 9×13-inch baking pan.
  2. In the baking pan, combine diced potatoes, cheddar cheese, bacon, garlic, and onion.
  3. Add mayonnaise and mix until all ingredients are evenly coated.
  4. Bake uncovered for 1.5 hours, or until potatoes are fork-tender and the top is golden brown.
  5. Let rest 5–10 minutes before serving.
