Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs, cubed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 0.5 cup BBQ sauce
  • 0.25 cup honey
  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

Method
 

  1. Season chicken with salt and pepper and mix BBQ sauce with honey.
  2. Sear chicken in oil until golden, then remove from skillet.
  3. Sauté onion and garlic until fragrant.
  4. Stir in rice and chicken broth, scraping up browned bits.
  5. Return chicken, add honey BBQ sauce, cover and simmer until rice is tender.
  6. Stir in vegetables, garnish, and serve warm.
