Ingredients
  

  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • 0.5 tsp vanilla extract
  • 1 cup fresh strawberries, finely diced
  • 8 slices white bread or brioche
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 0.25 tsp ground cinnamon
  • 1 pinch salt
  • 2 tbsp unsalted butter

Method
 

  1. Mix cream cheese, sugar, and vanilla until smooth. Stir in strawberries.
  2. Flatten bread slices gently with a rolling pin.
  3. Spread filling on bread and roll tightly.
  4. Whisk eggs, milk, vanilla, cinnamon, and salt.
  5. Dip roll ups in egg mixture and cook in buttered skillet until golden.

Notes
