Ingredients
  

  • 4 medium potatoes, peeled and chopped
  • Salt and pepper, to taste
  • 2 tbsp coconut oil or light olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 12 oz kielbasa, thinly sliced
  • 1/2 head green cabbage, sliced into ribbons
  • 2–3 tbsp water

Method
 

  1. Toss potatoes with salt and pepper in a microwave-safe bowl. Microwave 4 minutes, stir, then 2–4 minutes more until tender.
  2. Heat oil in a large skillet over medium-high heat. Sauté onions until soft and lightly browned.
  3. Add garlic and kielbasa; cook 3 minutes until golden.
  4. Add potatoes; toss and let sit undisturbed for a few minutes to crisp. Stir occasionally.
  5. Add cabbage, season with salt and pepper, splash water, cover, and steam 2 minutes until wilted but crisp.
  6. Adjust seasoning and serve hot.
