Ingredients
  

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 tsp salt
  • 1 tbsp olive oil or melted butter
  • 1–2 tbsp water, as needed

  • sharp knife or pizza cutter

Method
 

  1. Mix flour and salt, then add eggs and oil and combine into a shaggy dough.
  2. Knead dough on a floured surface until smooth and elastic.
  3. Wrap dough and let rest at room temperature for 30 minutes.
  4. Roll dough thin and cut into desired noodle shapes.
  5. Cook noodles in boiling salted water for 2–3 minutes until tender.
