  • 1.5 cups rolled oats
  • 0.5 cup smooth peanut butter
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 0.5 cup mini chocolate chips

Method
 

  1. In a bowl, mix oats, peanut butter, honey, and vanilla until a sticky dough forms.
  2. Fold in chocolate chips or other add-ins if using.
  3. Roll dough into 1-inch balls and place on a parchment-lined tray. Gently flatten.
  4. Chill in the refrigerator for 15 to 20 minutes until set.
