Method
- Preheat oven to 300°F and lightly grease a Dutch oven or heavy baking dish.
- Pat the roast dry and season with black pepper.
- Rub half of the onion soup mix over the roast.
- Mix remaining soup mix with condensed beef consommé.
- Place roast in pot and pour consommé mixture around it.
- Cover tightly and bake for 3.5 to 4 hours.
- Remove roast and rest for 15 minutes.
- Slice or shred and serve with the au jus.

For best results, use chuck roast and keep the pot tightly covered throughout cooking.
