Chicken and Marinade
  • 4 pieces chicken thighs, skinless You can also use chicken breasts or drumsticks.
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons jerk seasoning Store-bought works perfectly for convenience.
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 juice lime Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish (optional)

Method
 

Preparation
  1. In a bowl, mix the jerk seasoning, soy sauce, honey, olive oil, and lime juice. Add in minced garlic and chopped onion.
  2. Place the chicken thighs into the marinade and cover. Refrigerate for at least 15 minutes or overnight for better flavor.
  3. Preheat oven to 400°F (200°C).
  4. In a baking dish, arrange the marinated chicken and pour remaining marinade over.
  5. Scatter pineapple chunks around the chicken.
Cooking
  1. Cover the dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 20-25 minutes, until chicken is fully cooked (internal temperature of 165°F/75°C).
  3. For extra crispiness, broil chicken for an additional 2-3 minutes.
Serving
  1. Remove the dish from the oven, garnish with fresh cilantro or parsley, and let sit for a few minutes before serving.
