Directions
  1. Brown the Beef: In a skillet, cook the lean ground beef over medium heat until browned, usually about 5-7 minutes. Drain any excess fat to keep your casserole from becoming greasy.
  2. Prepare the Potatoes: While the beef cooks, wash and cut the diced potatoes into bite-sized pieces. Using small fingerling or creamer potatoes requires no chopping!
  3. Coat the Crockpot: Spray the interior of your crockpot with nonstick cooking spray to prevent sticking.
  4. Combine Ingredients: Add the cooked ground beef, diced potatoes, diced tomatoes, cheese soup, beef broth, and milk into the crockpot. Stir everything together well.
  5. Cook the Mixture: Cover the crockpot and cook on high for 3-4 hours or low for 7-8 hours until the potatoes are tender.
  6. Add the Cheese: About 5 minutes before serving, stir the mixture and top with shredded cheese. Cover until the cheese has melted.
