Chicken Preparation
  • 2 lbs boneless chicken thighs Juicier than chicken breast.
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
Taco Assembly
  • 12 pieces corn tortillas Warm before serving.
  • 1 bunch fresh cilantro Chopped.
  • 2 pieces limes Cut into wedges for serving.
  • 4 oz queso fresco cheese Crumbled.

Preparation
  1. Season chicken thighs with chili powder, cumin, paprika, salt, and pepper. Let them marinate for at least 15 minutes.
  2. Mash the avocados with lime juice and salt to make fresh guacamole. Set it aside.
  3. Dice the onion finely, chop the cilantro, crumble the cheese, and cut the lime into wedges.
Cooking
  1. Cook the seasoned chicken in a hot skillet for 6-8 minutes per side until charred and cooked through.
  2. Warm the corn tortillas on a dry skillet or over an open flame until they are pliable and lightly charred.
Assembly
  1. Slice the chicken and fill the tortillas with meat, guacamole, onions, cilantro, and cheese. Serve immediately.
