  • 1 cup Unsweetened Almond Milk Substitution: Any unsweetened non-dairy milk works well.
For Garnish
  • 2 tbsp Chopped Parsley Can be omitted for a simpler presentation.

How to Make Cozy One-Pot Chicken & Rice
  1. Heat the Olive Oil: In a large pot, warm the olive oil over medium heat. This will help brown the diced chicken for about 5-6 minutes until it's golden.
  2. Sauté the Veggies: Add the finely chopped onion to the pot, stirring for 2-3 minutes until softened. Then, toss in the minced garlic, cooking for an additional 30 seconds.
  3. Mix in Rice and Carrots: Stir the uncooked rice and carrot slices into the pot. Pour in the chicken broth, dried thyme, salt, and pepper.
  4. Simmer Together: Cover the pot and reduce the heat to low. Simmer for 18-20 minutes, stirring occasionally until the rice is tender.
  5. Add Creaminess: Stir in the almond milk and chopped parsley. Simmer uncovered for 3-4 minutes, adjusting seasoning as needed.
