  • 1 cup red lentils protein-rich base
  • 2 cups mixed vegetables (onions, carrots, etc.) feel free to include peas, corn, or green beans
For the Potato Topping
  • 3 medium potatoes slice thinly (less than 0.5 cm)
  • 2 tablespoons olive oil for drizzling over potato slices
For Seasoning
  • 1 teaspoon thyme use fresh herbs for stronger aroma
  • 1/2 teaspoon black pepper adjust to taste

Method
 

Steps to Prepare
  1. Preheat the oven to 180°C (350°F).
  2. Simmer the lentils with your chosen vegetables and seasonings in a pot for around 20-25 minutes.
  3. Slice the potatoes thinly and layer them over the lentil mixture in a baking dish.
  4. Drizzle olive oil over the layered potatoes and sprinkle with thyme and black pepper.
  5. Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 20 minutes.
  6. Serve immediately while warm.
