Steps to Prepare
- Preheat the oven to 180°C (350°F).
- Simmer the lentils with your chosen vegetables and seasonings in a pot for around 20-25 minutes.
- Slice the potatoes thinly and layer them over the lentil mixture in a baking dish.
- Drizzle olive oil over the layered potatoes and sprinkle with thyme and black pepper.
- Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 20 minutes.
- Serve immediately while warm.
