How to Make Zesty Cauliflower Leek Soup
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat to create a base for flavors.
  2. Wash and finely chop the leeks, and mash 3-4 cloves of garlic to infuse flavors.
  3. Add leeks and garlic, sauté for 5-6 minutes until softened and fragrant.
  4. Sprinkle in red chili flakes, nutmeg, black pepper, and kosher salt; stir well.
  5. Add cauliflower florets and broth; cover and simmer for 25 minutes until tender.
  6. Remove lid, stir in Parmesan cheese until melted for creaminess.
  7. Blend the soup until smooth, leaving some texture if desired.
  8. Taste and adjust seasonings with more salt, black pepper, or nutmeg as needed.
