How to Make Crispy Cashew Chicken
- Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and ginger until well combined.
- Toss chicken pieces in the marinade until well coated, then let them marinate for at least 15 minutes.
- Spread the marinated chicken on the lined sheet pan, surround with chopped bell peppers and onion, and drizzle with remaining marinade. Season with salt and pepper.
- Bake for 20 minutes without opening the oven door.
- Stir gently and sprinkle cashews over the top, return to the oven for another 10-15 minutes until chicken reaches 165°F (74°C).
- Let it rest for 5 minutes before garnishing with fresh cilantro and serving.
