  • 6-8 medium Yukon Gold or Russet potatoes Yukon Gold recommended
Coating and Seasoning
  • ½ cup freshly grated Parmesan cheese Parmigiano Reggiano preferred
  • 2 tbsp olive oil or melted butter Olive oil is preferred
  • 1 tsp garlic powder Or 2 cloves fresh minced garlic
  • 1 tsp paprika Smoked paprika recommended
  • Salt and pepper To taste
  • Fresh parsley or thyme For garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Scrub the potatoes well and cut them into ½-inch wedges. Soak them in cold water for 10 minutes, then pat them dry with a kitchen towel.
  3. In a large bowl, toss the potatoes with olive oil or melted butter, garlic powder, paprika, salt, and pepper until they are evenly coated.
Baking
  1. Arrange the potatoes in a single layer on the prepared baking sheet and bake for 25 minutes without disturbing them.
  2. Flip the potatoes over, sprinkle evenly with Parmesan cheese, and bake for another 15-20 minutes until they are deeply golden and crispy.
  3. For an extra crispy finish, broil the potatoes for 1-2 minutes, watching closely to prevent burning.

  1. Garnish with fresh herbs and additional Parmesan if desired. Serve immediately for the best taste and texture.
