Making the Cookies
- In a mixing bowl, combine softened unsalted butter, honey, and brown sugar. Beat until light and fluffy, about 3-5 minutes.
- Add in the egg and vanilla extract. Continue mixing until the mixture is smooth and well-combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and optional cinnamon.
- Gradually add the dry ingredients into the wet mixture. Stir until a soft dough forms.
- Cover the dough with plastic wrap and chill in the fridge for about 30 minutes.
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Once chilled, scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
- Sprinkle flaky sea salt on top as soon as they come out of the oven.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
