Method
 

Muffin Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, cinnamon, and salt in a large mixing bowl until well combined.
  3. Blend the Greek yogurt, brown sugar, eggs, and vanilla in a separate bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients by folding gently.
  5. Fold in the diced apples evenly.
  6. Fill the muffin cups about ¾ full with the batter.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
