Muffin Preparation
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, baking powder, cinnamon, and salt in a large mixing bowl until well combined.
- Blend the Greek yogurt, brown sugar, eggs, and vanilla in a separate bowl until smooth.
- Combine the wet ingredients with the dry ingredients by folding gently.
- Fold in the diced apples evenly.
- Fill the muffin cups about ¾ full with the batter.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
